Heat the milk in a pot over medium heat. Bring it up to 85°C, but do not let it boil. This step helps denature the milk proteins and ensures better fermentation.

In a small bowl, mix the yogurt starter with a few tablespoons of warm milk. Add this mixture back into the pot and stir well.
